I know a lot more about roasting peppers now than I did this morning...
- Cut the peppers into EVEN slices
- Peel while still just warm
- Red peppers peel better than green peppers
- Don't roast for too long - the crispy black bits on the edges are no use to you
- Olive oil is good for the roasting, but makes the pieces into slippery little suckers...
