OK - I'm giving up on the plastering. The more I do, the worse it gets. I was never any good at icing cakes, either!
I even have trouble mixing it...
...I gave up long ago trying to mix it with a stick! It is all little lumps and I am rubbish at getting it smooth - or even getting the thickness where I want it!
I have just measured up my two tall bookcases and found that they will both fit on that wall and cover nearly all of my 'rustic' plasterwork. (For rustic, read abysmal) - so - job done. When the plaster is dry I will try and smooth down the worst bits (well, that's most of it, actually) and paint it and then HIDE it with the bookcases. A result is a result!
I am rethinking the idea of plastering over the doorway though... ...a piece of plasterboard, cut to size, could simply be glued in place...

Yesterday my friends were showing me a huge tub of pre-mixed 'pate' that they'd bought from Leyroy Merlin. Would that do any good? They reckon it's a whole lot easier for skimming, but it might not plaster bare walls.
